Terry’s Awesome Sauce

I love cooking – I really do. But once in awhile I need a break. My husband is kind enough to make supper for me once a week. It sometimes involves take out haha. Usually he’ll just whip up something simple, like pizza. But once in awhile, he’ll make an exceptionally tasty meal.

Terry’s Awesome Sauce

3-4 cups of tomatoes, roughly chopped

1 clove of garlic, roughly chopped

1 stalk of celery, roughly chopped

a few dashes of liquid smoke

a sprinkle of nutritional yeast

season with salt & pepper

1 tsp of Extra Virgin Olive Oil

1 large handful of fresh basil, sliced into strips

Add everything except the olive oil & basil to your high-powered blender and mix. Add the sauce to a pot with the olive oil & basil and simmer on the stove while you prepare the rest of the meal.

Grab a couple of servings of your favourite noodles (we use Tinkyada’s gluten-free rice noodles) and cook according to the package directions. While that is cooking – get some veggies cooking.

Veggie Sautée

1 medium zucchini, chopped

1 medium yellow squash, chopped

1/2 of an orange pepper, chopped

2 tsp of Coconut Aminos (or soy sauce)

Heat a wok on the stove to medium heat. Add a bit of olive oil and sautée the zucchini and squash for 10 minutes until it is nice and soft. Add your pepper and and coconut aminos and sautée another few minutes.

Once everything is ready, layer your bowl with noodles first, then your veggies and finish it off with sauce.
